WINEMAKER'S NOTES
Fruit maturity was carefully monitored to ensure grapes were allowed to reach phenological ripeness. The result is lovely dark berry fruit characters and good tannins. Careful management of oak provides for structural balance and compliments the depth of flavour. The resultant wine is serious and well made an excellent example of the classical regional style.
TASTING NOTES
Colour: Deep purple red with a dark core.
Aroma: Ripe plum and chocolate like with a hint of vanillin oak.
Palate: Rich and soft with ripe fleshy plum flavours. A subtle spice is followed by a rich and generous mouth filling middle palate and fine tannins with a long and persistent finish.
Food matching: Margaret River venison sausage or smoked cheddar and fig paste.
Cellaring: Cellar for 3 to 5 years for a full expression of the wine.
