WINEMAKER’S NOTES
Our approach to this wine will evolve over time, however this vintage we have used some subtle oak maturation on a portion of the blend to enhance the flavour profile of Chenin Blanc. Oak gives flavour and a little more texture in the wine and augments the small addition of Chardonnay that adds some fine creamy middle palate body to the wine. Picked moderately ripe and cold fermented; the wine is in fine balance between alcohol and natural acidity and a great reflection of Margaret River quality.
TASTING NOTES
Colour: Pale green
Aroma: Lifted and herbal with fine delicate aromatic oil aromas, so typical of Chenin Blanc
Palate: Very flavoursome, with a lifted rich middle palate and an excellent persistent finish
Food matching: Chicken and veal dishes and a perfect aperitif
Cellaring: Enjoy now or cellar for 2 to 3 years.
Alcohol: 13.5% Standard drinks: approx 8.0
